Minted Pea Salad

1/2 cup mayonnaise1/4 cup sour cream1/4 cup minced fresh mint3/4 teaspoon salt1/4 teaspoon Dijon mustardDash pepper3 cups frozen peas, thawed1 small onion, finely chopped In a bowl, combine the first six ingredients; mix well. Lemon Marshmallow Fluff

1 (3 ounce) box lemon Jell-O1 small box lemon pudding 1 (8 ounce) container Cool Whip 1 (20 ounce) can crushed pineapple, undrained 2 cups colored miniature marshmallows Prepare Jell-O per directions on box.. Let gel slightly. Add dry pudding, blending well. Add pineapple with juice. Fold in Cool Whip and marshmallows.

Peach Jell-O Salad

2 small boxes peach gelatin 1 1/2 cups boiling water 1 (20 ounce) can crushed pineapple 1 (14 ounce) can sweetened condensed milk 1 (8 ounce) container sour cream 1 cup chopped pecans Dissolve gelatin in boiling water. Stir in remaining ingredients. Pour into 13 x 9-inch pan. Chill.

Pink Easter Salad

1 (20 ounce) can crushed pineapple, drained 1 (21 ounce) can cherry pie filling 1 (14 ounce) can sweetened condensed milk 1 1/2 cups toasted almonds 2 1/2 cups non-dairy whipped topping Mix all ingredients together and chill before serving. Makes 10 to 12 servings.
