Marinade for Red Meats

2 cups red wine2 tablespoons butter1 medium onion, finely chopped1 small handful parsley, chopped2 stalks celery, sliced thin1 can beef consomm

Honey-Garlic Marinade

1/2 cup lemon juice1/4 cup honey2 tablespoons soy sauce1 tablespoon dry sherry2 crushed garlic cloves In self-sealing bag, combine all ingredients. Add 4 pork chops to bag; seal and refrigerate overnight.

Island Marinade

1/2 cup orange juice4 tablespoons lime juice3 cloves crushed garlic2 teaspoons dried thyme1 tablespoon honey In self-sealing bag, combine all ingredients. Add 4 pork chops to bag; seal and refrigerate overnight.

Teriyaki Marinade for Chicken

1 cup soy sauce2 teaspoons sesame oil Juice of 2 orangesZest of 1 orange2 tablespoons brown sugar 2 tablespoons honey 2 teaspoons garlic, minced 1 tablespoon ginger, minced 1 teaspoon sesame seeds Blend all ingredients.

Tequila Marinade for Pork

Equal parts tomato juice and orange juiceOne-half part of tequilaLOTS of garlic powderSaltCumin*Oregano* Let the pork marinate in this for at least 1 hour. The longer it sits, the more amazing the flavor. You can add any of your favorite seasonings.

Rosemary Marinade for Lamb or Chicken

1/2 cup vegetable oil1/2 cup olive oil1/2 cup fresh lemon juice1/2 teaspoon thyme1 teaspoon dried rosemary or 1 tablespoon minced fresh rosemary1 clove garlic, crushed Mix together all ingredients. Marinate lamb or chicken for 8 to 10 hours or overnight.

Five-Spice Marinade

1/4 cup soy sauce1/4 cup dry sherry1/2 cup minced onion2 tablespoons grated fresh ginger root2 teaspoons five-spice powder2 tablespoons chili oil1 teaspoon sesame oil Combine all ingredients in a self-sealing bag. Add 4 pork chops to bag, seal and refrigerate overnight.

Fajita Marinade

2 pounds skirt steaks (fajitas)3/4 cup Mexican lime juice1/4 teaspoon Worcestershire sauce1/4 teaspoon soy sauce1/2 teaspoon ground black pepper1/2 teaspoon salt, or to taste Halve the skirt steaks lengthwise. Mix the remaining ingredients. Marinate skirt steaks for no more than 1 hour. Grill the skirt steaks slowly over mesquite.

Fajita Beer Marinade

1 cup bottled Italian salad dressing12 ounces beer1 large onion, mincedJuice of 3 Mexican limes3 tablespoons chili powder2 tablespoons minced fresh cilantro leaves2 tablespoons lemon pepper seasoning1 tablespoon Worcestershire sauce2 teaspoons ground cumin1 1/2 teaspoons garlic powder1 teaspoon cayenne1 bay leaf

Mexican Marinade
